This is what I eat (drink) for breakfast almost everyday. At first I was a little intimidated by the green smoothie revolution. I’ll be the first to admit that I eat food to enjoy it, not just for fuel. But I found this recipe with bananas and peanut butter and thought I’d give it a try. That was in March and we’ve had this for breakfast almost everyday since. Incredible that each serving sneaks 2 cups of spinach in! Unfortunately, I can’t remember where this recipe came from, but it’s very simple and delicious!
For 2 servings:
4 cups spinach
2 frozen bananas
1 cup plain greek yogurt
1 1/2 cups almond milk
2 tablespoons peanut butter (I use crunchy, but creamy would work too)
Throw it all in a blender and blend until smooth.
This smoothie is amazing! I go to work at 7am everyday and usually eat breakfast between 6:45 and 7:15. When I eat eggs or a bagel I am typically hungry by 11:00 or so, but with this smoothie, I don’t get hungry until around noon. Filling and delicious! And the banana peanut butter flavor was a major selling point with the boyfriend. All in all, a perfect solution to the morning meal.
